Why make matcha with coconut water?
Coconut water is not just a more interesting stand-in for plain water. It brings something specific to the recipe: a naturally sweet, fruity profile that softens the umami and gentle bitterness of ceremonial matcha without needing sugar or milk.
From a nutritional standpoint, coconut water contains potassium, magnesium, and calcium in their natural form. These act as electrolytes and, together with the L-theanine in matcha, support fuller hydration and a longer window of focused energy compared to matcha with plain water. That is why this combination has become popular among athletes, yoga practitioners, and anyone looking for clean, stable energy.
A glass of coconut water adds around 45 kcal and 6-7g of natural sugar with no added sweeteners. Combined with matcha, you get an energising drink with a low glycaemic load and none of the spikes that come with coffee or energy drinks.

Which matcha works best?
Ceremonial or High Ceremonial grade. Culinary matcha is formulated to hold its own against strong ingredients like milk, cacao, and cream. Paired with coconut water, which has a delicate flavour, culinary matcha overwhelms the drink and leaves a persistent bitter edge.
Ceremonial matcha, harvested from the first flush of the season (ichibancha), has the natural sweetness and umami needed to blend seamlessly with the fruity notes of coconut water. Among Greenglass varieties, Miyabi is the most intuitive choice: its fruity aroma with a macadamia finish and the tropical character of coconut water share complementary notes that bring out the best in each other.
Matcha Coconut Water: Step-by-Step Recipe
- 1.5-2g ceremonial matcha powder (1 chashaku or 1 level teaspoon)
- 20-30ml water at 75-80°C (for dissolving)
- 200-250ml natural coconut water, cold
- Ice (optional)
- 1 Sift the matcha powder. Pass 1.5-2g of powder through a fine-mesh sieve directly into your glass or bowl. This breaks up any clumps that form in the packaging and ensures the powder dissolves evenly. Do not skip this step.
- 2 Whisk with hot water and the chasen. Add 20-30ml of water at 75-80°C to the sifted powder. Whisk briskly with your chasen in a W or M motion (not circular) for 15-20 seconds until you have a smooth, intensely green paste with no visible granules. Hot water is essential even for an iced version: matcha does not fully dissolve in cold liquid.
- 3 Pour in the cold coconut water. Add 200-250ml of coconut water directly over the matcha paste. Stir gently with a spoon or swirl the glass for a few seconds. If you want it iced, add the ice cubes before the coconut water so the green colour stays more vibrant.
- 4 Drink it straight away. Matcha coconut water is best fresh. Skip the sugar: the natural sweetness of coconut water, combined with a good ceremonial matcha, makes the drink balanced without any added sweetener.
